Proof that pies don’t need heat to be spectacular.

I challenged myself to create a pie—a decadent pie—highlighting the multi-talented Vitamix® blender (in fact, I’d argue that it is way more than just a blender). This recipe uses the Vitamix for each of the four mixtures that ultimately come together into one singularly fabulous pie. The Vitamix does a bang up job of crushing chocolate wafer cookies for the crust; it pulverizes whole roasted peanuts into creamy homemade peanut butter; it mashes bananas like a banana mashing champ; AND it whips cream in literally 5.7 seconds. (Impressed? You should be. And don’t fret if you don’t have one, because I’m GIVING ONE AWAY right here. For real. Don’t miss it!)

As much as I would have liked to throw everything in the blender all at once and call it the 5.7 second pie (believe me, I tried), each mixture really needs to be prepared individually and then folded together in a specific order. But luckily, the Vitamix only needs to be washed once during the process, between the other steps a quick rinse will suffice. Because that may be my least favorite part of ANY nifty gadget: the cleaning.

We’ve had our Vitamix for over 5 years (and it’s still going strong). It was a wedding gift, and is easily one of the most used appliances in our kitchen. But one thing I had never ventured to make with it was homemade peanut butter.

Can I say what a revelation homemade peanut butter is? Because, hello, honey-roasted OMG. Seriously, honey roasted peanut butter SHOULD be a thing. WHY isn’t it a thing? I seriously can’t believe it isn’t.

But who cares, because I now know how easy it is to make it myself. The Vitamix turns peanuts into liquid gold in under 2 minutes.

While I froze the pie, you can also just refrigerate it if you prefer a more pudding-like consistency. Either way, it’s spectacular in its simplicity.

Honey Roasted Peanut Butter Banana Cream Pie

Ingredients:

For Crust:

  • 8 ounces chocolate wafer cookies
  • 2 tablespoons brown sugar
  • 5 tablespoons unsalted butter, melted

For Filling:

  • 10 ounces (2 cups) honey roasted peanuts
  • 1 banana, peeled and cut into chunks
  • 1 tablespoon honey
  • 2 cups heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Directions:

  1. To prepare crust, crush cookies in the Vitamix on high speed until finely ground, using the tamper as needed to redistribute cookies. You should end up with 1 1/2 cups of cookie crumbs. Transfer to a bowl and stir in brown sugar. Add butter and mix until evenly incorporated. Press into the bottom of a 9-inch spring form pan or in the bottom and up the sides of a 9-inch pie pan. Freeze crust until filling is ready. Rinse any remaining crumbs out of the canister and pat dry.
  2. Place peanuts in the canister and secure lid with the tamper in place. Turn machine on at the lowest speed, and gradually increase the speed to Variable 10, then to High, using the tamper to keep the nuts moving. Continue to mix for another minute or so, until the peanut butter begins to flow freely through the blades. You may notice the sound of the motor change from a high pitch chugging sound to a low laboring sound. Stop the machine and transfer the peanut butter to a large bowl, scraping as much of the peanut butter out of the canister as you can.
  3. Don’t worry about cleaning the canister at this point. Add banana chunks and honey. Turn to the lowest speed, then increase to Variable 5 for about 1 minute or until banana is liquefied (the slightly lower speed here will prevent too much of the banana from splattering up the sides). Pour into bowl with peanut butter and stir to combine.
  4. Wash and dry canister to remove any residual peanut butter. You want to be sure the canister is very clean at this point so your cream will whip up properly.
  5. Add cream, sugar, and vanilla to canister. Turn to the lowest speed, then increase to Variable 5 for about 10 seconds. Watch it very carefully, the second the top of the cream stops moving, turn off the mixer immediately. Over-mixing will result in butter rather than whipped cream.
  6. Stir the whipped cream in the canister to even out the consistency (the top might be slightly firmer than the cream on the bottom). Remove about 1 cup of cream and set aside to use as a garnish later. Add about half of the remaining whipped cream to peanut butter mixture; fold to incorporate and lighten the filling. Fold in the remaining whipped cream until smooth.
  7. Pour filling into prepared crust,  smoothing top with an offset spatula or butter knife. Spoon or pipe remaining whipped cream in a decorative manner around the edges of the pie. If using a springform pan,  you can cover the entire thing with aluminum foil without touching the cream. If using a pie pan, leave it uncovered. Refrigerate or freeze for 1 to 2 hours or until set or frozen. If frozen, let come to room temperature for 10 to 15 minutes before serving (it’ll be easier to slice that way).

  1. This looks great! I have a KitchenAid Food Processor, can I use this instead of the Vitamix? Or will it make it too soupy?

    • The food processor should work for everything I would think. The peanut butter will probably take a bit longer to get smooth, but should work just fine, although I’ve never tried whipped cream in the food processor. Just be careful there you don’t end up with butter. :)

  2. For those worried about stressing out the machine, could you do the peanuts, banana, and honey blended all in one step? Will definitely have to try this pie! (Really need a piece NOW!)

    • I tried, and it didn’t work. Something about the banana prevents the mixture from getting smooth. You’d end up with a very chunky, greasy looking peanut butter that doesn’t make for a very good texture for this pie unfortunately.

  3. How could I make this healthier? I am currently on a high protein regimine and I would like to use PB2.  I’m not much of a cook so I have no idea how to alter your recipe to make it with less fat and sugar.

    • Sorry I cannot advise on nutritional modifications. You could leave out the sugar and it wouldn’t affect the consistency, it’d just taste less sweet. Maybe replace the fresh whipped cream with a low-fat whipped topping but honestly I really don’t like to eat that stuff. Sorry I can’t offer more advice, rather than to find a pie recipe that meets your nutritional needs to begin with.

  4. I just made this pie. It’s now firming  in the refrigerator. I made the whipped cream 
    in the Vitamix, but I do not recommend it. 
    I will stick to the mixer !  That way I can 
    actually take my time and get it to the proper 
    peak stage. It’s too easy to ruin whipped 
    cream using a Vitamix. 

    • I stopped the mixer the second the cream stopped moving at the top. The top was a bit firmer and the bottom was softer, but when stirred together it was just about right. But yes, half a second too long and you’d end up with butter.

  5. If I want to make the pie with a purchased jar of honey roasted pb, how much would I use?  I have made almond butter before and the ratio seems to be 2 cups of nuts equal 1 cup of finished nut butter.  Is that right?

    • I did not get a cup measurement before I mixed it into the pie, but the weights should be equivalent no matter what, so 10 ounces of peanut butter would be my suggestion. :)

  7. Well Lindsay and dear all, today I’ve made this cake. Amazing taste – very rich, but everyone scooped it up.
    The base needs a touch bit more butter as it did not quite stick together, the cream top was just perfection and one slice really is enough of it as it melts in your mouth and fills you up.

  18. Do you need the dry blade for the cookies or can you use the standard blade that comes with the Vitamix?

    • I used the standard blade and it was fine. Used the tamper to keep the cookies moving, and paused occasionally to shake it up even more.

  19. OMG!!!!!!!! This Vitamix Blender is MAGIC!!!!! My eyes have quite literally popped out of their sockets looking at the photographs! Who would’ve ever thought that you could whip cream in a BLENDER!!!!!!!! This is magic and so is the pie!!!! It looks DELISH!!!! :)

    • I would not attempt to make peanut butter in a normal blender unless the manufacturer says it can handle it. It’s a very tough job and could easily burn out a blender. A food processor would be a better choice!

  23. This looks divine! In fairness, Peter Pan PB does make a honey roasted pb. Maybe it is a regional thing? I’m in TX. I can’t buy it anymore because I cannot be trusted around it.

  25. Where can you get honey-roasted peanuts?

    • They usually sell them with the regular snacking peanuts/nut mixes in the store. Just a different flavor, like the kind you used to get on airplanes. ;)

    • The sprinkles are called Cocoa Pearls from Trader Joe’s. I think they have been discontinued (unfortunately). I love them, they’ve got a great crunch to them that is perfect on top of just about anything.

  34. My husband and I gave each other our Kitchenaid mixer (Blendy II, yes we name our appliances!) for our first Valentina’s day. The Vitamix seems perfect for our next one. And I can’t wait to try this pie.

But what a genius idea to do the whipped cream in the Vitamix. My mom has one at home and I never thought to suggest she make her fabulous whipped cream in the blender!

  46. Omg!! I am adding this in the “millions of reasons why we need a vitamix” box. I am trying to convince my husband that it’s not just a 500$ blender. This receipe should convince him. It’s ridiculous how obsessed I am about pies and this particular appliance, a little embarrassing actually. How do we enter this contest?

    • A cup of what? It depends on what is being measured.

    • just in case you were talking about peanuts – two cups of peanuts is 292 grams I believe (referencing my vitamix s50 recipe book actually, straight out of the peanut butter recipe instructions)

  50. Ok one thing I never make in my Vita is homemade Pb. I always make it in my food proc b/c I think the cleanup is easier and b/c I once had a close call with motor burnout. I need to try again though after seeing your creamy, amazing, awesome pics of that PB! And the pie. And the cream. This is my dream pie! And it’s nobake! You thought of everything :)

    • Yikes, me too! Plus I never got to a creamy consistency. Not sure what I did wrong but too scared to try again.

    • I totally agree!! I never make nut butters in my Vitamix, mostly because I find it a pain to get out.  But I have to try it again now!   But whipped cream?!  Totally doing this.  

    • I make nut butters in mine but I have one with a wider base which makes it easier to get out! But it’s so much better to have it done in 5 min versus WAY longer in the food processor!
