Grilled Cheese with Apricot Jam and Arugula

Remember a week or so ago when I begged, er, asked nicely to vote for my rainbow cake in the Butter recipe exchange? Well, if you hadn’t heard, I won. And I am pretty darn proud and thankful for all of you who rallied behind me. (Thank you!)

Anyways, the prize for the victory, a $150 Kerry Gold gift basket, arrived shortly after. While I knew I was getting some butter (and fantastically amazing butter at that), what I didn’t expect was the sheer quantity of cheese. Swiss and cheddar and gouda, oh my!

Now the grilled cheese probably makes more sense, huh?

But this isn’t just any grilled cheese, this grilled cheese has class. With a thin layer of homemade apricot jam and a few leaves of fresh arugula added at the very last minute, this sandwich is as delicious as it is simple. I mean, it is a grilled cheese, after all. And what a perfect way to highlight the superb ingredients I was given.

This particular sandwich makes use of Kerry Gold’s unusual Dubliner cheese, described as somewhat sweet, somewhat nutty (sound like someone else you know?). That slight sweetness, when combined with the fruit jam and spicy arugula, makes for the perfect grilled cheese sandwich.

Grilled Cheese with Apricot Jam and Arugula

Makes 2 sandwiches.

Ingredients:

  • 4 slices country bread
  • 4 oz. Kerry Gold® Cheddar or Dubliner cheese, sliced
  • 2 tablespoons apricot (or other fruit) Jam
  • 1 tablespoon Kerry Gold® salted butter
  • 1/4 cup arugula

Directions:

  1. Preheat a large skillet or sandwich press on medium-high heat.
  2. To assemble sandwiches, spread a thin layer of jam on one side of bread. Top with a double layer of cheese slices and second piece of bread. Generously butter outsides of both pieces of bread.
  3. Put sandwiches in skillet and toast until bread is golden brown and cheese is melted, about 3-4 minutes per side. Remove from pan. Carefully (it will be hot!) peel apart bread and place arugula inside and replace top slice of bread. Cut in half and serve immediately.

  6. I love gouda and ham grilled cheese. Or blue cheese and pear grilled cheese. Or simple cheddar grilled cheese with tomato soup. I don’t think you can go wrong with this amazing comfort food.

  10. i loved my grilled cheese with sharp cheddar cheese, lettuce, tomato and avocado! there is a grilled cheese restaurant called melt where i live and they make a delicious grilled cheese with pierogies, sharp cheddar, and caramelized onions. mmmm

  16. My ultimate grilled cheese has several types of cheese as well as cream cheese and avocado and tomatoes on sourdough, preferably with Parmesan on the outside. So good!

  17. ok ready? I got this idea from a grilled cheese sandwich I ate at Melt: homemade pierogies, sauerkraut, swiss and FRENCH FRIES!! (and you can only eat that once every three years, because it’s a heart attack in a sandwich! I actually ended up with 3 more meals out of it!)

  18. Ohhh how I love grilled cheese. My favorite is buttered sourdough spread with pesto and thinly sliced tomatoes, and a mix of provolone and cheddar cheese. MMMM.

    Tomato Focaccia
    Laughing cow light swiss
    Aged white cheddar
    a little dab of pesto
    thinly sliced tomato

  23. As long as you use a good thick bread, so that the cheese doesn’t overwhelm it. Like a crusty french bread and a sharp cheddar, all is good!

  27. my perfect grilled cheese has cheddar and mozzarella cheese, grilled tomato slices and a little bit of dried basil, grilled in olive oil to get the crust nice and crispy. great, now i’m starving!

  31. My perfect grilled cheese includes sourdough bread (a must), an unhealthy amount of cheddar cheese, and whole grain djion mustard. After its all gooey, peel it apart and add ripe roma tomatoes sprinkled w a touch of sea salt.

  32. Great grilled cheese is simply about using quality ingredients. Various breads and various cheeses will taste delicious, provided you splurge a little. That being said, I’m a sucker for some sharp cheddar cheese and apple slices.

  35. My favourite grilled cheese sandwich has to have some bite in it! Between slices of sandwich bread, I load a few slices of gouda, some bits of blue cheese and *green peppercorns in brine*.

  36. Oh what a great question! For me, it’s two slices of Ezekiel sprouted bread (or homemade), a light spread of dijon mustard, raw milk cheddar, and avocado. I leave the tomato slices on the side so they don’t sog anything down. I could easily eat that for dinner every night of the week :)

  37. My ultimate grilled cheese starts with ciabatta bread smothered with fig paste then throw on some parmesan and prosciutyo and you’ve got yourself a salty/sweet sandwich!!

  45. Aged extra sharp cheddar Kerry gold and their butter makes the best grilled cheese. Make it on some guinness bread and it is a winner

  47. My ultimate grilled cheese is this insanely yummy whole grain bread with all types of seeds, buttered up good and it has two slices of bacon, two tomatoes and two different types of cheese – swiss and provolone. TO DIE FOR. I plan on making this for dinner tonight now that you mention it!

  48. The best grilled cheese I ever had was made with asiago, parm, and reggiano and had a tad of white truffle oil drizzled on top. SOO good.
