Despite the fact that we were stewing and spicing and pumpkining it up in mid-May, we absolutely loved developing these autumnal recipes for Le Creuset. Doesn’t this Beet Soup with Beet Green Pesto just make you want to start caroling? And don’t get me started on the fried crispy capers and pumpkin seeds that get sprinkled on top of those Pumpkin Shrimp & Grits.

I have just learned to make butternut squash and apple soup. I think I may have to make the Pumpkin Shrimp and Grits – to die for!!!! (anything pumpkin=yummy) The Beet soup with the Best Green Pesto looks fantastic!!! I make about 6 kinds of pesto but have never made beet soup – only roasted beets from my CSA box. That you are actually giving away a shaped LeCreuset is a dream come true and that it is a cocotte set is unbelieveable. I LOVE it.
