Despite the fact that we were stewing and spicing and pumpkining it up in mid-May, we absolutely loved developing these autumnal recipes for Le Creuset. Doesn’t this Beet Soup with Beet Green Pesto just make you want to start caroling? And don’t get me started on the fried crispy capers and pumpkin seeds that get sprinkled on top of those Pumpkin Shrimp & Grits.
