Remember a week or so ago when I begged, er, asked nicely to vote for my rainbow cake in the Butter recipe exchange? Well, if you hadn’t heard, I won. And I am pretty darn proud and thankful for all of you who rallied behind me. (Thank you!)
Anyways, the prize for the victory, a $150 Kerry Gold gift basket, arrived shortly after. While I knew I was getting some butter (and fantastically amazing butter at that), what I didn’t expect was the sheer quantity of cheese. Swiss and cheddar and gouda, oh my!
Now the grilled cheese probably makes more sense, huh?
But this isn’t just any grilled cheese, this grilled cheese has class. With a thin layer of homemade apricot jam and a few leaves of fresh arugula added at the very last minute, this sandwich is as delicious as it is simple. I mean, it is a grilled cheese, after all. And what a perfect way to highlight the superb ingredients I was given.
This particular sandwich makes use of Kerry Gold’s unusual Dubliner cheese, described as somewhat sweet, somewhat nutty (sound like someone else you know?). That slight sweetness, when combined with the fruit jam and spicy arugula, makes for the perfect grilled cheese sandwich.
Grilled Cheese with Apricot Jam and Arugula
Makes 2 sandwiches.
4 slices country bread
4 oz. Kerry Gold® Cheddar or Dubliner cheese, sliced
2 tablespoons apricot (or other fruit) Jam
1 tablespoon Kerry Gold® salted butter
1/4 cup arugula
Preheat a large skillet or sandwich press on medium-high heat.
To assemble sandwiches, spread a thin layer of jam on one side of bread. Top with a double layer of cheese slices and second piece of bread. Generously butter outsides of both pieces of bread.
Put sandwiches in skillet and toast until bread is golden brown and cheese is melted, about 3-4 minutes per side. Remove from pan. Carefully (it will be hot!) peel apart bread and place arugula inside and replace top slice of bread. Cut in half and serve immediately.

Delicious! Best grilled cheese I ever had was buttery crunchy sourdough, good quality cheddar, gruyere, fontina and blue cheeses, thinly sliced roasted tomatoes and avocado and crispy bacon. Insane…

I love gouda and ham grilled cheese. Or blue cheese and pear grilled cheese. Or simple cheddar grilled cheese with tomato soup. I don’t think you can go wrong with this amazing comfort food.
Last night I had a grilled cheese and bacon sandwich with a little of my Satsuma and Bourbon marmalade. Divine! Must have the marmalade from now on. Recipe at http://www.cowlickcottagefarm.com.
Fresh sourdough bread, sharp Vermont cheddar cheese, tomato, avocado, thinly-sliced red onion, and if I want to go extra decadent, a fried egg!
i’m also a fan on fbook!

I like mixing up the cheeses (cheddar is a must! but I like getting adventurous and adding to that) and throwing in a couple slices of tomato. All on well-buttered wheat bread.
I like you on FB! :)

My ULTIMATE grilled cheese would be cheese (whatever’s on hand…I’m not picky when it comes to cheese), bacon, and avocado slices! Sometimes I like to spread some apple butter on there too! Mmmm…. Now I’m hungry!
And I like you on FB. :)
My ultimate grilled cheese has several types of cheese as well as cream cheese and avocado and tomatoes on sourdough, preferably with Parmesan on the outside. So good!
ok ready? I got this idea from a grilled cheese sandwich I ate at Melt: homemade pierogies, sauerkraut, swiss and FRENCH FRIES!! (and you can only eat that once every three years, because it’s a heart attack in a sandwich! I actually ended up with 3 more meals out of it!)
Ohhh how I love grilled cheese. My favorite is buttered sourdough spread with pesto and thinly sliced tomatoes, and a mix of provolone and cheddar cheese. MMMM.
I think it’s best to keep it simple: rye bread, cheddar, and a couple slices of tomato
… And I “like” you on FB!
My fave grilled cheese goes as follows:
Laughing cow light swiss
Aged white cheddar
a little dab of pesto
thinly sliced tomato
Sourdough bread, butter, grainy mustard, sea salt, fresh thyme and grated Gruyere. OMG, drooling now……..
As long as you use a good thick bread, so that the cheese doesn’t overwhelm it. Like a crusty french bread and a sharp cheddar, all is good!
Also, I am following your Twitter now. I’d follow on FB as well but I left that site long ago and won’t be going back. ;)
My ultimate grilled cheese is Gouda & white cheddar melted on toasted sourdough with a couple of strips of really crunchy bacon tucked inside, and just a little bit of a good spicy mustard in there somewhere.
i’m also a facebook fan :)
my perfect grilled cheese has cheddar and mozzarella cheese, grilled tomato slices and a little bit of dried basil, grilled in olive oil to get the crust nice and crispy. great, now i’m starving!
sharp white cheddar, turkey, onion, stone ground mustard, then after grilling add some sliced avocado.
I have liked you on facebook. Social Media FTW.
I tweeted the giveaway. Plus, I was just happy to find out that you were on Twitter!
My perfect grilled cheese includes sourdough bread (a must), an unhealthy amount of cheddar cheese, and whole grain djion mustard. After its all gooey, peel it apart and add ripe roma tomatoes sprinkled w a touch of sea salt.
Great grilled cheese is simply about using quality ingredients. Various breads and various cheeses will taste delicious, provided you splurge a little. That being said, I’m a sucker for some sharp cheddar cheese and apple slices.
I am also a facebook fan already!
I follow you on twitter :)
My favourite grilled cheese sandwich has to have some bite in it! Between slices of sandwich bread, I load a few slices of gouda, some bits of blue cheese and *green peppercorns in brine*.
Like you on facebook
Oh what a great question! For me, it’s two slices of Ezekiel sprouted bread (or homemade), a light spread of dijon mustard, raw milk cheddar, and avocado. I leave the tomato slices on the side so they don’t sog anything down. I could easily eat that for dinner every night of the week :)
My ultimate grilled cheese starts with ciabatta bread smothered with fig paste then throw on some parmesan and prosciutyo and you’ve got yourself a salty/sweet sandwich!!
Blue cheese, walnuts, and honey on super grainy whole wheat bread.
perfect grilled cheese is homemade sourdough, crispy onions/mushrooms and dubliner! With a side of home made oyster soup to dip it in…
Bacon and lots of it and gruyere cheese.
I’m a fan of smoked gouda grilled cheese on sourdough bread and dipping it in tomato bisque soup. Yum!!

My ultimate grilled cheese is this insanely yummy whole grain bread with all types of seeds, buttered up good and it has two slices of bacon, two tomatoes and two different types of cheese – swiss and provolone. TO DIE FOR. I plan on making this for dinner tonight now that you mention it!
The best grilled cheese I ever had was made with asiago, parm, and reggiano and had a tad of white truffle oil drizzled on top. SOO good.
My ultimate grilled cheese would have english farmhouse cheddar cheese, fresh tomatoes (from the garden), and garlic.
