Grilled Cheese with Apricot Jam and Arugula

Remember a week or so ago when I begged, er, asked nicely to vote for my rainbow cake in the Butter recipe exchange? Well, if you hadn’t heard, I won. And I am pretty darn proud and thankful for all of you who rallied behind me. (Thank you!)

Anyways, the prize for the victory, a $150 Kerry Gold gift basket, arrived shortly after. While I knew I was getting some butter (and fantastically amazing butter at that), what I didn’t expect was the sheer quantity of cheese. Swiss and cheddar and gouda, oh my!

Now the grilled cheese probably makes more sense, huh?

But this isn’t just any grilled cheese, this grilled cheese has class. With a thin layer of homemade apricot jam and a few leaves of fresh arugula added at the very last minute, this sandwich is as delicious as it is simple. I mean, it is a grilled cheese, after all. And what a perfect way to highlight the superb ingredients I was given.

This particular sandwich makes use of Kerry Gold’s unusual Dubliner cheese, described as somewhat sweet, somewhat nutty (sound like someone else you know?). That slight sweetness, when combined with the fruit jam and spicy arugula, makes for the perfect grilled cheese sandwich.

Makes 2 sandwiches.

  • 4 slices country bread
  • 4 oz. Kerry Gold® Cheddar or Dubliner cheese, sliced
  • 2 tablespoons apricot (or other fruit) Jam
  • 1 tablespoon Kerry Gold® salted butter
  • 1/4 cup arugula

  1. Preheat a large skillet or sandwich press on medium-high heat.
  2. To assemble sandwiches, spread a thin layer of jam on one side of bread. Top with a double layer of cheese slices and second piece of bread. Generously butter outsides of both pieces of bread.
  3. Put sandwiches in skillet and toast until bread is golden brown and cheese is melted, about 3-4 minutes per side. Remove from pan. Carefully (it will be hot!) peel apart bread and place arugula inside and replace top slice of bread. Cut in half and serve immediately.

  11. My ultimate grilled cheese would have gouda on it.

  12. My ultimate grilled cheese consists of dill havarti and aged cheddar. On the bread I always use real butter then dip it into a pan of fresh parmesan/garlic mix, so there is actually “grilled cheese” on the outside of the bread when you fry it in the skillet :)

  13. I love your version of the grilled cheese!!! My favorite would have to be with sharp white cheddar, chutney and turkey!

  14. I love a grilled cheese simple with a tomato and for more color, fresh basil. It is delicious!

  15. Liked on FB, following on Twitter and tweeted about the giveaway, too!

  16. This is actually a favorite grilled cheese variety of ours, but otherwise I’d say fig jam, prosciutto and chevre, a la Salumi in Seattle.

  17. I ‘liked’ you on Facebook!

  18. I made a grilled cheese sandwich the other day with fresh sourdough bread, mozzarella, sharp cheddar, feta, parmesan and creamy caesar dressing. It was pretty much amazing.

  19. The ultimate grilled cheese: Turkish eski kasar cheese (kind of similar to cheddar), hot mustard, organic tomatoes, and arugula.

  20. And, I liked you on FB.

  21. My ultimate grilled cheese is on a good sourdough bread. Any kind of cheese. Lots of butter. It can be doctored up with other things or not. I know what I’m having for lunch!

  22. My ultimate grilled cheese is definitely cabot habanero cheese and sliced heirloom tomatoes!

  23. You can’t beat toasted bread with gooey cheese. Plain and simple for me. But I’m going to take Lindsay’s suggestion of some garlic salt. And now I’m having grilled cheese for lunch. I even have some Kerrygold cheddar. Yum.

  24. Oh and I already “like” you on Facebook! Thanks for all of the great recipes!!

  25. liked on facebook!

  33. My ultimate grilled cheese is made with sharp cheddar and thin slices of grilled apple. Delicious!

  34. Annnd I’m a Facebook fan! (I made your blue cheese/apple/caramelized onion panini yesterday – & I think I’m on my mom’s good side for the next week, at least.)

  35. The best grilled cheese I’ve ever had was from a kitschy little restaurant all the way up in Portsmouth, New Hampshire. It was cheddar & American cheeses on cayenne-cheddar bread (SO. GOOD.) with a little bit of olive-garlic spread & strawberry-habanero dipping sauce on the side. Seriously, I die. I desperately wish I lived closed so I could eat it more regularly – I could try to recreate it for myself, but how the eff will I figure out how to make cayenne cheddar bread?!

  36. So many cheeses to choose from…
    My favorite:
Sliced Asiago & Muenster with some thin slices of Granny Smith apple. I might throw some bacon on there as well. =)

  37. ultimate grilled cheese: camembert with prosciutto and sunflower sprouts on artisan bread.

  38. my husband LOVES it when i put some turkey or ham in his grilled cheese!

  39. I’m a fan on facebook! :)

  40. My ultimate grilled cheese would be on a beautiful sourdough with Tillamook sharp cheddar and beefsteak tomatoes from my garden. Oh man, my mouth just watered from writing that!

  41. I like good old-fashioned Kraft american singles with sliced tomato, and any kind of bread as long as it’s toasted to an even, dark golden brown!

  42. I’m not picky, i just like lots and lots of cheese! The one you made sounds absolutely delicious though!

  43. Back when we could have nuts (one of my kids has since been diagnosed with a nut allergy), I used a muesli bread from Whole Foods that made for absolutely divine grilled cheese. Thank you for the giveaway!

  44. Ultimate grilled cheese…So many options for this!!!
But I really like a classic american cheese and tomato on white bread and properly grilled..complemented by good pickles and french fries – nothing else beats that….although andrea’s sandwich sounds delicious as well!!

  45. I am pretty much a basic girl – I like cheddar and white bread on my grilled cheese.

  46. Ultimate grilled cheese – on an everything bagel, with beefsteak tomatoes and cheddar cheese. To die for. My mom used to make it for me ;)

  47. My ultimate grilled cheese sandwich is one made by my husband – probably because he uses more butter than I do on the bread, and always adds a sprinkle of garlic salt!

  48. My favorite grilled cheese is the one my grandmother used to make me. Nothing fancy, just oven roasted turkey, sharp cheddar cheese, and miracle whip. The sweet with the sharpness of the cheese makes me “melt” every time. Thanks for taking me back to my childhood.

  49. My ultimate grilled cheese would include sourdough bread, English Cotswold Cheese w/Chives, and sliced, homegrown tomatoes….yum!

Oh, and I’m also a fan on Facebook!
