No-Bake White Chocolate Peppermint Pots de Creme

If you’re entertaining this holiday season, the last thing you want is some fussy, complicated dessert. At the same time, you want something that will impress your guests; something that will seem like it took you more time than it really did.

These white chocolate peppermint pots de créme are just the thing, luxurious and creamy, with a white-chocolate custard base and festive notes of peppermint. Add some freshly whipped cream on top and you’re ready to party.

Traditionally, pots de créme are baked in a “bain-marie,” or water bath. I prefer to skip that step, using gelatin to set the custards instead. So technically, they are not true pots de créme (the purists here will have to forgive me), but once you see how easy and delicious they are you’ll forget all about that technicality.

    I would blend up some “blender hollandaise” sauce! It’s not the traditional way of making it, but it’s far better than any version I’ve ever had elsewhere! Mmm!

    I’d make something for my PICKY 4 year old and rest easy knowing that she wasn’t eating another stinkin’ hot dog for lunch. I often try to make her smoothies with spinach or kale but my blender is LAME and doesn’t get the greens smooth enough for her. (Sigh. That girl).
    This would be such a blessing! It would put this momma’s mind at ease knowing that my girl was getting some good nutrients.

    First use for a beautiful new blender would be experimenting with alternative pestos for the basil-less season!! Different herbs? Peas? Other greens? I have some recipes to start with, but sadly no blender or food processor . . . the neighbors would be thrilled if I got my own instead of borrowing theirs!
