Despite the fact that we were stewing and spicing and pumpkining it up in mid-May, we absolutely loved developing these autumnal recipes for Le Creuset. Doesn’t this Beet Soup with Beet Green Pesto just make you want to start caroling? And don’t get me started on the fried crispy capers and pumpkin seeds that get sprinkled on top of those Pumpkin Shrimp & Grits.

Seeded Sorghum Dinner Rolls

Thinking outside the pumpkin, and proving that these pans aren’t just for soups and sautées, these Seeded Sorghum Dinner Rolls are little baked balls of fluffy, doughy bliss. Turns out you CAN bake bready things in these adorable pots. Also, sorghum? Like honey and molasses had a summer fling. Sweet and sassy at the same time.

Spiced Deep-Dish Chocolate Chip Cookies

    I’d make a casserole with fresh cubed pumpkin, a grain of some kind and a green like spinach or chard. Yum, and so pretty in the cocotte!

    These are so cute. I love Halloween and pumpkins, and of course LeCreuset. I would definitely make your pumpkin shrimp and grits. I’ve already downloaded the recipe. I made cheesy grits last week. I’m a big fan of grits.

    Would love to win this set!!  The first thing I would make in it is Loaded Baked Potato Soup…in the oven.  YUM!!!  I would serve bacon and cheese in the other two smaller pumpkins.  Can’t wait!!

    I would make my mother-in-law’s sweet potato casserole.  No sticky marshmallow topping here, it’s pecans and brown sugar and deliciousness (aka BUTTER).  My coworkers ask me to bring it to potlucks by name.

    I’d totally go with some kind of cinnamon and pumpkin bread pudding as my first dish to make in something as gorgeous as these. I love the color!
