Despite the fact that we were stewing and spicing and pumpkining it up in mid-May, we absolutely loved developing these autumnal recipes for Le Creuset. Doesn’t this Beet Soup with Beet Green Pesto just make you want to start caroling? And don’t get me started on the fried crispy capers and pumpkin seeds that get sprinkled on top of those Pumpkin Shrimp & Grits.

Seeded Sorghum Dinner Rolls

Thinking outside the pumpkin, and proving that these pans aren’t just for soups and sautées, these Seeded Sorghum Dinner Rolls are little baked balls of fluffy, doughy bliss. Turns out you CAN bake bready things in these adorable pots. Also, sorghum? Like honey and molasses had a summer fling. Sweet and sassy at the same time.

Spiced Deep-Dish Chocolate Chip Cookies

Even better than pumpkins are petite pumpkins, and the more the merrier. You won’t have to share your cookies with these single serving Spiced Deep-Dish Chocolate Chip Cookies (well, they’re really more suitable for two, but no one, especially not me, is forcing you to share if you don’t want to).

    Oh my goodness, this is the cutest Le Creuset dish ever! Want, want, want!!! I think a pumpkin French toast casserole is in order in this dish!!! I would thoroughly enjoy making it for my family in this dish. Beautiful :-)

    I’m imagining Red wine pinto beans with bacon, served with hearty tranches of French Boule (http://www.nytimes.com/recipes/1014548/red-wine-pinto-beans-with-smoky-bacon.html). This was the first meal I made with my boyfriend, Ben.
    The mini cocottes would be perfect for individual pumpkin spice cakes.

    I have been subscribed for a while and enjoy your posts.  I love beets, so I’d try the beet soup but might use basil pesto instead, as I have so much in the freezer.  A Le Creuset cocette has been on my “want” list for a long time.  Thanks for the opportunity.

    For me Fall doesn’t start until Roasted Chicken with potatoes and carrots are made for dinner.  That would be the first thing I would make in this set!!

    The cocettes are adorable.  And perfect for a small treat, rather then finishing off a whole pan of brownies.  I would love to try a pumpkin bread (so many *bucks copycats ones to
    try :)   with a nice sprinkle of pumpkinseeds on top.
