Beet Soup with Beet Green Pesto

The fun pieces from Le Creuset just keep coming. Hearts, flowers, and now pumpkins? LC, you slay me. What’s next? Kitty cat cocottes? (That would make my day!)

Despite the fact that we were stewing and spicing and pumpkining it up in mid-May, we absolutely loved developing these autumnal recipes for Le Creuset. Doesn’t this Beet Soup with Beet Green Pesto just make you want to start caroling? And don’t get me started on the fried crispy capers and pumpkin seeds that get sprinkled on top of those Pumpkin Shrimp & Grits.

Seeded Sorghum Dinner Rolls

Thinking outside the pumpkin, and proving that these pans aren’t just for soups and sautées, these Seeded Sorghum Dinner Rolls are little baked balls of fluffy, doughy bliss. Turns out you CAN bake bready things in these adorable pots. Also, sorghum? Like honey and molasses had a summer fling. Sweet and sassy at the same time.

Spiced Deep-Dish Chocolate Chip Cookies

Even better than pumpkins are petite pumpkins, and the more the merrier. You won’t have to share your cookies with these single serving Spiced Deep-Dish Chocolate Chip Cookies (well, they’re really more suitable for two, but no one, especially not me, is forcing you to share if you don’t want to).

  36. I collect pumpkins! Usually real ones, I can’t get enough in the fall, so I end up with 5 different squashes sitting on my counter. Time to make some soup with them.

  37. Oh my gosh, these are adorable! I love my one and only Le Creuset pot and use it ALL the time! It’s a toss up if I’d make pumpkin pie baked oatmeal or my roasted squash soup (topped with bacon) in it first. I’d get tons of use out of these… I would even display the smaller ones for decoration when not using :)
