Hey there! I had the exact same overwhelming fear of pie crust and ALWAYS used store bought, until one day mt boyfriend's mom staged an intervention. She's one of these people who can just "whip up" an apple pie, plus both crusts, from scratch, in 15 minutes, without making any appreciable mess... and it always turns out perfect. She just uses the pie crust recipe from the Better Homes and Gardens cookbook, that red one that everyone in the world has? It's the best, and now my pies turn out perfect too!

The cookie pie crust sounds great but I'm laughing at your description of it growing in the oven. It certainly looked interesting if not tasty. The final pie crust sure does look purdy.

What is it about pie crusts!? I have a crushing fear of them as well, and when I told my grandmother about it this year (I figured she'd have a tip, since she bakes ALL of the Thanksgiving pies in my family), she confessed that she ALWAYS USES STOREBOUGHT CRUST. All these years I've been thinking she rolled out those crusts herself!!

Still, I did successfully make my own this year!! http://mozzarellaandmerlot.wordpress.com/2009/11/22/pecan-pie/

What do you mean you cant do crusts - the one you made looks great! When I do pumpkin pie I dont blind bake the crust before, so it is even easier, just throw the filling into the crust and bake together. Also, have you tried the cooks illustrated pie crust with vodka in it? very easy, one of the best crusts I have made and I have made lots. Does NOT taste like vodka - cooks out. The article describes all the science behind it. see if you can find it on their website and if not I'll send it.
