I would totally substitute the olive oil for the vegetable oil.  Olive oil is much better for you and it taste much better too.

Olive oil is great for frying foods.

My only suggestion is to use a basic every day Extra Virgin Olive Oil.  This will save you a couple bucks.  Save the really good stuff for finishing your dish with. A nice drizzle right before you serve your dish really melds the flavors.
