I'm still making cornbread mostly from a mix as well...might I suggest using Weisenberger's Mill instead of Jiffy? It's in a little yellow-labeled white bag; in Kroger, it's near Jiffy. They're out of Kentucky and all their mixes and grains are wonderful. And they don't have lard like Jiffy does. Add some sugar if you want to make sweet muffins. I also like to add a little whole kernel corn for some texture.
