		<description>The colors in this recipe are glorious -- and it combines all things I love (salmon, corn, beans, spinach). I&#039;d probably omit the cilantro, which isn&#039;t my favorite, and substitute the amazing flat-leaf parsley that&#039;s growing in my herb garden. Yum-o, as Rachael would say!</description>
