I've been making this granola for quite some time, now. It's the greatest snack. Kenny loves it too. Here are my changes, suggestions.

Double up on the nuts if you are a nut lover. I use cashews and pecans.

Double up on the Vanilla.

Sprinkle cinnamon on part of the finished batch (after baking). Gives us two varieties:vanilla and cinnamon. Think I like the cinnamon best, now.

Just made our first batch :) Added craisins, walnuts, almonds and some other things we had laying around - I wanted to put in apricot pieces and banana chips, but Ben said no. I'll let you know how it turned out after we eat it tomorrow for breakfast! xoxo

We use the sweetened kind, but the health food kind would probably work too! As far as oats, just standard rolled oats, not the quick variety. And yes, raw sunflower seeds and nuts, as you roast them yourself in the baking process. :)

This is the BEST granola. I received a jar of it as a Christmas present from Margie and Robin (you too, Lindsay?) It never got home. I had it in my car and one day I had to stop 4 times on my way home (5 miles) to munch. It's a great car treat if I could only figure out a way to eat and drive at the same time. Any ideas for a one handed granola to mouth device?

I have a few questions: What kind of coconut? The sweetened flake or the unsweeted bulk health food store variety?
Is the oatmeal your standard Quaker oats or something else?
Are the sunflower seeds and cashews raw?
I have to make this stuff soon.

Still my favorite breakfast also. Whenever possible, add fresh berries! I think this would be a great stir in, when making chocolate chip cookies, but I have not tried this yet.
